

Spring is here

I ended up working last Tuesday night so my fettuccine had to wait. I also worked Saturday all day so I didn’t make the Almond Encrusted Tilapia either
I had planned to make taco’s for dinner Sunday night BUT my little brother and his vegetarian girlfriend, who were in town for spring break, came to stay with us last night so Erica and I cooked together: Fettuccine Alfredo and spinach salad with a tons of toppings. YUM!
Monday - Neil’s not working (for once!) and I get off at 6pm. We are NEVER home on the same night so this is a big deal! Neil suggested going out to eat at, you guessed it, the Oasis. I say, he can’t get enough of that place. I also say, homemade tacos it is!
Tuesday - Neil and I both work Tuesday night. Bummer. It’s fast food for me!
Wednesday - Neil will be working…again. I, however, will be in Paducah shopping with my friend Amy. We’ll either eat at Red Lobster or Outback. Both sound delicious so it’ll be a tough choice!
Thursday - This time Neil will be off and I will be working. I’ll most likely be stopping by Subway on my break.
Friday - Neil=work. Me=work. Oy. Guess I’ll be having Subway for dinner again!
Saturday - Usually we don’t work until late afternoon and are able to cook eat lunch together (I went into work early last Saturday to cover for someone…it’s not normal) but Neil will be in Murray taking some student teaching test. I’ll snack until work and then snack when I get home from work.
Sunday - My work schedule doesn’t come out until Wednesday so I won’t know if I’m working on Sunday until then. One think I do know is that I’ll be eating alone even if I’m not working. Neil always works a double on Sundays. I never thought I’d say it but: I long for 8-5 days. Will they ever get here??
